Waffle Wednesday!

Hey, YACKAMANIACS!  One if the things that we hear most from cleints is that they do not make brekafast a priority.  But did you know, skipping breakfast can wreak havic on your nutirional health?!  There’s a reason that they say, “Breakfast is the most important meal of the day.”  Check out this great article to learn more about why you should be making breakfast a priority:


Now let’s get to the real reason we are all here, WAFFLES!  This recipe is so easy to batch up and make your meals for the week.  2 backs of sweet potatoes will usually yield enough for 7 days worth of pancakes depending on your macro’s.  This recipe is super clean and simple with just 3 staple ingredients (a few more if you want to get fancy with it!)

Sweet Potato Waffles

  • 300g (1 1/2 cup) Cooked Sweet Potato

Leave the skin on for extra potassium, dice up your potatoes and place them on a cookie sheet.  Season them however you like (cinnamon, stevia, protein powder).  Cover your potatoes with foil and cook at 400 degrees for 20-30 or until soft.

  • 12 fl oz liquid egg whites
  • 1/2 tbsp baking powder

Once your potatoes are cooked, measure out 300g of cooked potatoes and place in blender, add on your egg whites and baking powder.  Blend until a nice batter forms.

Scoop out about 1 cup of batter (1/4 of your mixture) and place in a nonstick waffle iron.  Each batch makes 2 servings.  Continue making batches until your potatoes are gone or you have enough made for your week.  Place them in freezer safe bags and then freeze.  When you are getting ready for work, simply pop on in the toaster oven and have it on your way out the door!
